S'mores Stuffed Chocolate Chip Cookies
This recipe is amazing! I found it on Dip It In Chocolate's blog and had to try it out. I made a few changes and ended up with 20 delicious cookies.
Ingredients:
2 sticks (8 ounces) softened butter
1 cup granulated sugar
¾ cup packed light brown sugar
2 eggs
1 tablespoon vanilla
3½ cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
2 cups semisweet chocolate chips
1 cup granulated sugar

2 cups semisweet chocolate chips
4 Graham Crackers, quarters broken in half
1 Hershey bar, broken at perforations and cut in half
5 large marshmallows cut into thirds
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, beat butter and sugars. Add eggs and vanilla and beat until well-blended.
3. In a separate bowl, mix flour, salt and baking powder.
4. Slowly add dry ingredients to butter mixture. Add chocolate chips.
Now for the fun part!
5. Create mini S'mores using the graham cracker pieces, chocolate, and marshmallow.
6. Place small balls of cookie dough on either side of your mini S'more. Pinch together sides and create a ball. Add or remove dough as necessary to cover the S'more.
7. Place on baking sheet and bake 14-18 minutes, or until cooked through. Cookies will remain full and cakey. Don't worry if marshmallows ooze through -- yum!

8. Cool on pan 7 minutes before moving to cooling rack.
9. Enjoy!
